About
Inspired by the legendary L’Oiseau Blanc, the French biplane flown by aviators Charles Nungesser and Francois Coli.
In 1927, they embarked on a daring nonstop flight across the Atlantic - an extraordinary journey that has become one of aviation’s great mysteries. Though they never reached their destination, their courage, ambition, and pioneering spirit continue to inspire generations.
That same spirit of exploration lives on in our kitchen, where our chef draws inspiration from his roots in the coastal traditions of Puglia, while embracing the places, flavors, and experiences he encountered along the way. The result is a cuisine rooted in tradition, yet unafraid to venture somewhere new.
